It's Go Time! - Harvest Monday (6/11)

The summer bounty is finally here.  Today my son and I harvested a huge haul from the garden.  Over 11 lbs. of produce!  It looks like the garden has finally decided that it is go time.  Prior to this we had been picking one or two squashes and cukes a day.  We skipped Sunday and today couldn't believe all of the veggies we found.

My son's vision for arranging the veggies!

We picked our first white lightning eggplant, some anaheim peppers, plus one jalapeƱo.  I also found one green tomato sitting on the ground.  My guess is a squirrel thought about eating it but decided to wait for them to ripen.

We also got enough salt and pepper cucumbers to make our first batch of refrigerator pickles.  My husband and son love them so much the jar is already half empty!

Finally, we picked over 7 lbs. of squash from the garden today.  This is in addition to the bag that my son brought home from his grandparents this weekend.  Some of these are a little large.  They were hiding under the vine.  It rained last night and beat down the leaves so we could finally see them.  I have already sent him out to neighbors to foist some squash off on them!

    2. What variety of Zukes are those? They look like the photo of the costata romanesco ones we are trying to grow this year....

    3. You know your zucchini! They are costata romanesco. The plants are absolutely huge and crowding out my other squash and cukes.

    5. You know, it think it is just alright. To be fair, I am not a huge fan of any of the summer squashes. I neither love them nor hate them. I do not think they have a lot of flavor. I was hoping that this one would live up to the hype and have great flavor but I still think it is just alright. However, my husband and father-in-law both remarked that they thought it had good flavor when I served it the first time and they did not know I was growing a different duke this year. Maybe it is just me.

  3. Love the artful arrangement of the harvest! That is a nice haul of summer squash and cukes. We really love refrigerator dills too and go through them fast when available. I have a while before our first cukes will be on but looking forward to them.

    1. Thanks. It was the first time we got enough to make refrigerator pickles. My son just gobbles them up!

  4. love your son's clever arrangement! What a haul. Now that my grand kids have moved away I don't have much incentive to make pickles, tho I might make a few bread and butters later this summer.

    1. Between my husband and my son I can't seem to make enough pickles. I don't even bother with real pickles. There is no need since they are eaten within days.

  5. Beautiful! Those little scallop squash are so cute... I keep thinking about planting them because they are pretty, then remember that I don't like squash. lol

    1. They are adorable but I am in the same boat as you are. None of us are huge fans of squash and we have it coming out of our ears now!
